is there any way to record with a mixer hooked up?

Yepp, plug the record out of your mixer to the line in of your card and use a record tool like SB recorder or waverec. That´s all.

I've found Total Recorder from High Criteria to be good (www.highcriteria.com) it has a built in vu meter in it's smallish window.
